Lesson Outline

French Dinner Party

  • Tomato Tart Tatin; caramalized tomatoes baked under puff pastry and overturned to reveal an impressive starter to your dinner party
  • Chicken Ballotine; boneless chicken drumsticks stuffed with julienne of vegetables served in a light white wine sauce
  • Crepe Suzette; always a welcome dessert these thin pancakes heated in orange sauce can be made ahead of time and simmered just before serving

Mediterranean Meals

  • Eggplant dip with roasted pita triangles; roasted eggplant made into a luscious dip served with crudite and/or roasted pita triangles
  • Moroccan fish stew; the magnificence of the med spices combine to bring you a light but stunning winner
  • Vegetable tagine; a combination of vegetables where pumpkin takes centrestage
  • Filo fruit cups; a fruit salad in a crispy cup - just the thing to finish off a med meal!

Indian Feast    

  • Cheese Koftas with tomato dip
  • Butter chicken
  • Lamb Korma
  • Briyani Rice
  • Cucumber & Mint Raita

Pasta Sauces

  • Primavera (Vegetarian)
  • Marinara (Seafood with white wine)s
  • Carbonara (Pancetta with creamy egg sauce)

Spanish Meals

  • Chickpea Salad; a delicately dressed salad to accompany any meal
  • Spanish Meatballs; tender meatballs, simmered in a white wine sauce
  • Paella; this is my personal favourite out of my repertoire
  • Flan de Almendras; an almond-orange dessert with a caramelized base

Taste of Thailand

  • Pineapple Fried Rice: An authentic recipe that is beautifully presented; a complement to any thai dish or just a meal on its own.
  • Seafood Glass Noodle Salad: This makes a light and tasty starter or a lovely light meal.
  • Dry Beef Curry: Tender beef cooked with a red curry base – an absolute winner!
  • Steamed Salmon: The natural flavour of the fish is enhanced by using herbs to make this a healthy yet tasty meal.
  • Glutinous Rice with Fresh Mango: A simple yet mouth watering dessert, with a beautiful presentation.

Mexican Meals

  • Chilli con carne; a knock-out dish that’s just right for a big family meal or buffet with all the accompaniments including both a regular and low fat recipe for Guacamole
  • SalsaQuesadillas; tortillas filled with melted cheese – a wonderful appetizer
  • Mexican wedding cake; something for those days when you just want to treat yourself

Wonderful Salads

  • Shitake Mushroom & Mesclun Salad; a delicately flavoured yet outstanding salad
  • Roasted Vegetable & Cous Cous Salad; a delicious accompaniment for your favourite Mediterranean meal
  • Herb and Rice Salad; fluffy rice tossed with herbs and a little lemon zing
  • Curried Chicken Salad; eaten on it’s own on rolled in a wrap!
